Jennifer Cuevas

The Gluten & Grain Free Gourmet supports delicious eating that is gluten, grain, soy, and poultry free. Jen Cuevas experienced her own journey to wellness by eating this way, and desires to share the message that life can still be delicious!
Just a few short years ago, Jen was ill with a multitude of issues (although not typical “Celiac” symptoms), including high cholesterol, pre-diabetes, sudden weight gain [over 60 pounds], Hashimoto’s, and arthritis (read more of her story here). After more than seven frustrating visits with various doctors, she finally learned about her gluten sensitivity and Celiac disease. In becoming well, she found that life without gluten was really great from a health perspective, but affected everything else that had a social factor.

In the time since her diagnosis, Jen has spent a lot of time learning. She was treated by Dr. Glen Aukerman (author: Better Health in 120 days) and attended all of his classes to understand the medical aspect of how various foods affect gluten sensitivity. After further health issues inspired her to do more research, Jen went completely grain and soy free in 2012, and became a certified coach under the direction of Gluten Free Society. She uses her own health journey to coach and inspire others to consider dietary changes as a way to achieve optimum health. In 2013 she established a support group, and found that food availability continued to be the biggest barrier to success. She began developing food products that support a grain-free, soy-free and even dairy-free lifestyle; many items are allergy-friendly and are free of refined sugars. She also offers allergen-free Communion to churches, raising awareness about the effects of gluten exposure.


Join Dr. Burkman ND and Dr. Julia Vitali DO for a lecture on the health side of gluten free diets. From celiac disease, food sensitivities to food allergies, how do you know if you are sensitive and should be avoiding? They will offer suggestions on lab testing and diet alterations that can help to guide your gluten free journey.

Dr. Burkman ND is a Naturopathic Physician at Collaborative Natural Health Partners. While she has a passion for all things natural, she particularly enjoys treating the digestive system and learning how food can create a healthy ecosystem and healthy life.

Dr. Vitali, DO, is an Osteopathic Primary Care Physician at Collaborative Natural Health Partners. In addition to sees patients for routine physical examinations she has cultivated her love for osteopathic manipulation and its ability to heal through manual treatment. In her practice of medicine, Dr Vitali endorses the osteopathic tenet of the human body as a unit of body, mind, and spirit.

CJ is a content marketer and author, who fell into wheatlnessness one May six years ago when she was diagnosed with Celiac Disease. She is now a nutrition consultant as well, and is the founder and author of Tumbling Gluten Free, both a nutrition business and blog. She has worked with schools and community co-ops, as well as restaurants and bed and breakfast establishments to teach and instate safe food preparation practices as a consultant.

Paige is a local author of GLUTEN-FREE GHOULS which is a FUN, COLORFUL children’s book that will be a DELIGHT TO ALL READERS young and old while sharing a valuable lesson on why it’s important to eat healthy! The six Gluten-Free Ghoul characters Gloppy, Bogey, Teaky, Oafie, Pops, and Bonkers live in a giant treehouse and love to play baseball and golf - and they even skateboard! But their favorite thing to do is eat! Join them as they scramble through town gobbling up leftover pizza, spaghetti, and their favorite pies. The only trouble is that their not-so-healthy eating habits begin to create some frustrating and itchy symptoms. Their doctor tells them to eat a gluten-free diet. Gluten-Free Ghouls is a great rhyming book that is sure to bring about some giggles as children enjoy the silly characters while the story builds awareness of the importance of eating well. Food sensitivities like gluten or allergies such as peanuts, dairy, etc. are so prevalent these days and children need to be aware of what can happen even if they don’t have celiac disease (a severe innate autoimmune disorder) or aren’t allergic to certain foods themselves. It also helps children without gluten sensitivities or allergies to better understand what their friends go through who do have to follow specific diets. As for friends who have celiac disease, gluten sensitivities or food allergies, Gluten-Free Ghouls will show them that others deal with the same issues even six hungry green ghouls. 

Regina Shula
Over the years Regina learned to be a chef and party planner from some of the best teachers, starting with her mother. The call of the Theater was drowned out by the love of cooking and sharing the love of food with others. Finally opening her own restaurant/catering business was a dream come true. After years of establishing her catering business Regina realized there was something missing. More and more of her clients were discovering they had Celiac disease or gluten allergy/sensitivity. Mary Herrington came into her life. Mary is a fabulous baker, dealing with multiple allergies within her own family, including herself. Together they closed Regina's place of business for a complete cleansing and brave new dive into becoming the first 100% Gluten Free Cafe and bakery in Fairfield County. There was a lot of experimentation, tears and successes. It was an exciting time. Unfortunately, as is often the case, life got in the way and Mary and Regina parted ways, the business closed, but the friendship remained. Regina is here today to present one of Mary's books, much of it gleaned during those years of experimentation and beyond. Regina continues her quest as a personal chef, specializing in creating dishes that take into account food allergies, without removing the joy and love of food.

Katie Grzybowski

Katie is a highly successful sales and marketing expert with over 17 years in the field and a history of multi-million dollar sales. Katie is an ardent horse lover with a lust for life.  Katie’s passion comes from overcoming her own hardships and demons.  Being  diagnosed with Fibromyalgia by the Mayo Clinic and with Pre-Multiple Myeloma (MGUS), Katie had to adjust to find ways to overcome these obstacles so she could continue to do the things she loved and to attain the highest possible quality of life.

In her quest Katie discovered Young Living Essential Oils.  Through Young Living she found immune support, joint and muscle support as well as sleep support.  She did lots of research and found that Young Living provided a lifestyle of health and wellness for herself and her entire family and and she is passionate about sharing her discovery with others.
